I was in a cab with a friend the other day driving down 14th street in Manhattan when we passed one of my favorite late night diners. I always have the turkey chili when eating there - ordered it the first time I went and haven't ever strayed. Chatting about my diner fave inspired me to make my own turkey chili this weekend, using white beans and greek yogurt to garnish to make it my own.
I made this chili with the goal of creating a meal that is full of fuel for my body, tasty, and filling. To me, that means lots of protein, low on the bad stuff. I exercise many days a week and am on my feet for 8 hours a day in the kitchens at my culinary school, so eating food that gets me through the day is important.
Another important aspect? Getting a great meal despite my sometimes crazy schedule. I don't always have hours to cook and look for dishes that can pretty much cook themselves. Having the proper kitchen appliances is critical - a slow cooker allows you to mix together everything you want, come back a couple hours later, and poof - a meal is made!
I made my White Bean Turkey Chili using my BELLA Programmable Slow Cooker, letting it stew for 3 to 4 hours until it was tender, deeply flavored, healthy, and delicious. The recipe and procedure are below!
White Bean Turkey Chili
[tabgroup layout="horizontal"] [tab title="Ingredients"]1 lb ground turkey
1 yellow onion
1 teaspoon oregano
1 1/2 teaspoon cumin
1 tablespoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
2 cans of white beans (cannellini)
1 can diced green chiles, drained
1 cup low-sodium chicken broth
1 bunch green onions greek yogurt to finish[/tab] [tab title="Procedure"]1. In a small bowl combine all spices, salt, and pepper. Reserve half the bowl of seasoning for slow cooking and half for sauteing the turkey.
2. In a large saute pan heat up 2 tablespoons of canola oil or other neutral oil. Season the turkey and onion with the spices and brown in the pan until the turkey is no longer pink and the onion is translucent.
3. In the BELLA Programmable Slow Cooker, combine the cooked turkey, onion, white beans, green chiles, chicken broth and remaining seasoning and cook on LOW for 3-4 hours.
4. Once the chili has cooked, spoon into bowls and garnish with slices of green onion and a dollop of greek yogurt.[/tab] [tab title="Notes"]Difficulty Level: Easy[/tab] [/tabgroup]
